Carrot Ginger Soup | Krem juha od mrkve i đumbira

This is one of my favourite soups. A wonderful combination of pureed carrots, of spices, with a warming effect because of the ginger, comforting, not too complicated. The perfect soup on a cold and rainy day :-) You can make it ahead, the soup can be refrigerated overnight. Just reheat gently before serving, and enjoy with fresh, homemade bread.

Curried Creamy Carrot Ginger Soup

Ingredients

  • 8-10 carrots (about 800 gr), peeled and sliced
  • 1 litre vegetable stock
  • 1 red pepper, chopped
  • 1 onion, chopped
  • 1 tablespoon curry powder
  • 1 teaspoon ginger, freshly grated
  • 3 potatoes, peeled and chopped (*optional)
  • 2 tablespoons olive oil
  • 2-3 tablespoons parsley, finely chopped
  • 1 cup (175 ml) of Crème Fraiche or sour cream (up to your taste)

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté onion until tender and translucent. Do not let onions become brown. Pour in the vegetable stock, add the chopped carrots and potatos, and simmer until the carrots are soft, about 15- 20 minutes. Transfer soup to a blender, and purée until smooth (or use a hand held blender). Add ginger, the curry powder, crème fraiche (or sour cream) and chopped parsley. Mix creamy. Pour back into the pot. You can thin with water to your preferred consistency or leave it very creamy. Sprinkle chilli flakes or pumpkin seeds on top before serving. Enjoy warm!

Vrlo sličnu juhu sam već jednom  objavila na starom blogu, ali slike su transferiranjem na novu domenu nestale, pa danas recept, pomalo drugačiji a ipak vrlo sličan, objavljujem sa novim sličicama. Kremasta juha je prefina, curry harmonira s mrkvom, đumbir zagrijava, i ako dodate malo čilija prije serviranja, kao ja ovaj put, uz svježim, domaći kruh uživat ćete kao i ja , sigurna sam :-)  Juhu možete pripremiti i dan prije, ostavite je u hladnjaku, pa kad dođete s posla dočekat će vas juhica koja će vam zagrijati i dušu i tijelo!

Krem juha od mrkve i đumbira

Ingredients

  • Sastojci (za 4 osobe):
  • mrkve (8-10 komada, otprilike 800 g)
  • 1 l vode
  • 2 kockice za juhu
  • 1 paprika, crvena
  • 1 crni luk
  • 1 žličica đumbira (svježe ribanog ili u prahu)
  • 1 jušna žlica curry začina
  • 3 krompira, srednje veličine (*opcionalno: možete i izostaviti)
  • 2 žlice maslinovog ulja (za dinstanje luka)
  • 2-3 žlice nasjeckanog, svježeg peršuna,
  • 175 g Creme Fraiche ili kisela pavlaka (po želji)
  • sjemenke bundeve i čili za dekoraciju

Instructions

  1. Priprema:
  2. Mrkvu i krompir oljuštiti, pa kao i papriku isjeckati na kockice. Luk oguliti, isjeći na kockice.
  3. U loncu na maslinovom ulju kratko prodinstati luk, dok ne postane staklast (ne čekati dok posmeđi). Onda dodati vodu i kockice za juhu..
  4. Onda u lonac dodati mrkvu, krompir i papriku i kuhati otprilike 15-20 minuta, dok krompir i mrkva ne omekšaju. Peršun dodati pri kraju kuhanja.
  5. Kad mrkva i krompir omekša, sve izmiksati u blenderu.
  6. Dodati creme fraiche (ili pavlaku), đumbir i curry začin,, pa još jednom sve promiješati.
  7. Po želji začiniti (papar, so). Servirati toplo.
