Zucchini Cheese Pie/ Pita s tikvicama i sirom

Here in Vienna it is wintery today, it is raining and the perfect time to sit down with a huge cup of my beloved mint tea and write a post… It is a prolonged weekend, my  friends have decided to drive away to visit their families, others have planned a weekend getaway and are on their way to London and New York. I am staying home this weekend and enjoy it!  My plans are finishing some translation work and edit some photos that I want to post soon, and I am looking forward to watch a couple of good movies in the evenings, with my hubby :-)

I have posted a picture of the easiest Zucchini Cheese Pie a couple of days ago on my facebook page, and would now like to share the recipe with you. It is  a great, easy family recipe, so perfect when you need a delicious and quick lunch. It will take about 5 minutes to combine all ingredients, you will need just one bowl,  and in 35 minutes the pie is ready.

Ingredients
  1. 3 eggs
  2. 120 grams of Feta cheese
  3. 220-250 ml buttermilk
  4. 150 g plain yogurt
  5. 1 zucchini, grated
  6. 250 grams all-purpose flour
  7. 50 g spelt flour
  8. 75 ml sunflower oil
  9. 1 pack (15 g) baking powder
Instructions
  1. 1. Preheat the oven to 180°C / 350 F.
  2. 2. Use parchment paper for the baking pan.
  3. 3. In one bowl beat eggs, then add all wet ingredients, combine well.
  4. 4. Add all dry ingredients, stir until combined.
  5. 5. Add grated zucchini (I don't peel them) and crumbled cheese, combine with a wooden spatula, until it is just combined. Add salt and pepper up to your taste
  6. 6. Pour the batter into the prepared baking pan.
  7. 7. Bake at 180°C / 350 F for about 25 minutes or until a skewer inserted comes out clean.
  8. Serve warm or cold.
Notes
  1. Serve warm or cold, with a salad and a glass of yoghurt.

Kod nas je produženi, neradni vikend, a vrijeme loše, da lošije ne može biti. Hladno je, kiša ne prestaje padati, ali ionako sam planirala, za razliku od mojih dragih prijateljica koje su iskoristile priliku da skoknu do Londona i New Yorka, ja sam odlučila da se ušuškam u dekicu, ispijam meni omiljeni čaj od mente, završavam neke prijevode, a planiram i da napokon sredim i editiram neke fotografije koje već odavno čekaju da budu objavljene. Uvečer ćemo ja i suprug, uz vincek pogledati i koji dobar film, i tome se već jako veselim :)

Neki dan sam na Facebook stranici objavila sličicu brzinske pita sa sirom i tikvicama, pa ću danas podijeliti recept s vama :) Meni je jedan od omiljenih receptića kad nemam puno vremena i zatreba „brzinski“ ručak, obično napravim i salatu kao prilog, a kad ni to ne stignem nama uz čašu jogurta to uvijek bude jednako fin ručkić :)

Brza, jednostavna, fina pita, gotova za 30 minuta (5 minuta pripreme+ 25 minuta pečenja)

Ingredients
  1. 3 jaja
  2. 220-250 ml mlaćenice (može i tečni jogurt)
  3. 150 g čvrstog jogurta
  4. 120 g feta sira, izmrvljenog
  5. 1 tikvica, naribana (ne gulim je)
  6. 250 g brašna (može i glatko i oštro)
  7. 50 g pirovog integralnog brašna (ako nemate, može i integralno, ali i samo bijelo brašno, ako volite)
  8. 1 prašak za pecivo
  9. 75 ml ulja (npr. suncokretovo)
  10. 1/2 žličica soli (feta sir je sam po sebi jako slan. Ako koristite neki neslani mrvljivi sir, dodajte više soli)
  11. papar po želji
Instructions
  1. Zagrijte peć na 180°C. Obložite pleh (20x30 cm) papirom za pečenje. Dobro izmutite jaja, onda dodajte sve mokre sastojke (*sir i tikvice se stavljaju na kraju) , izmiješajte. Onda polako dodajte sve suhe sastojke, izmiješajte. Na kraju dodajte izmrvljeni sir i izrendanu tikvicu (neocijeđenu), i samo malo promiješajte špatulom, tek toliko da se masa sjedini. Tijesto sipajte u pripremljeni pleh.
  2. Peći oko 25 min. na 180°C ili dok ne dobije zlatnožutu boju.
Notes
  1. Servirati toplo ili hladno,uz salatu ili jogurt.
