Egg-free Apple Carrot Cake | Kolač s jabukama i mrkvom bez jaja

And suddenly, it’s autumn…I love the scents and flavours of autumn, when the kitchen is filled with the scent of cinnamon and apples… Last weekend I have experimented with an old recipe for eggless cinnamon cake, changed quite a lot, added shredded apples, carrots, and oats, then doubled the amount of cinnamon. I tend to put more cinnamon than required. Everywhere and every time. I cannot help myself, I  love cinnamon! The result was wonderful: a soft, quick to make, flavourful, cinnamon-spiced eggless apple carrot coffee cake. M. loved it too :-)

If you want, you may dust the cake with powdered sugar, or cinnamon and sugar or make a frosting, but we like it without it.

Apple Carrot Cinamon Cake (egg-free)
An incredibly moist and flavorful spiced-cinnamon coffee cake.

Ingredients
  1. 1 cup brown sugar
  2. 1 teaspoon vanilla essence
  3. 1 cup cake flour
  4. 1 cup whole wheat flour
  5. 1/2 cup of oats
  6. 1 carrot, shredded
  7. 2 apples, peeled and grated
  8. 1 pack baking powder
  9. 1-2 teaspoons cinnamon (up to your taste)
  10. 1 cup milk
  11. 1/2 cup canola oil
  12. lemon juice of 1/2 lemon
Instructions
  1. Preheat oven to 350 F/ 175°C degrees.
  2. Mix all the dry Ingredients together. Do not use a hand mixer for this recipe, use a ladle or spoon. Then mix in the carrots, apples, lemon juice and the oil to the dry ingredients.
  3. Grease baking pan with oil, then dust with flour.
  4. Put the batter into cake pan (I used a round pan- 26cm) .
  5. Bake for 20-25 minutes or until knife/toothpick comes out clean when inserted in the center.
  6. Let cool completely.
Notes
  1. Sprinkle some powdered sugar or cinnamon before serving.

Ne volim jesenje kiše, ne volim kad je tmurno i hladno, ali jako volim jesenje mirise, onaj divni miris jabuka, cimeta koji se širi kuhinjom, i onu toplinu doma, kad se ušuškam u dekicu, uz divnu knjigu, čaj, kolačić ili keksić i uživam u tišini. Ovo je baš takav tip kolača koji je meni prošli vikend u mojoj ušuškanosti, knjigu i čaj upotpunio nedjeljno poslijepodne… Divno mek, sočan, mirisan, nastao kao rezultat eksperimentiranja, bez vaganja, onako brzinski, mjera je u šoljama. Originalni stari recept, odavno zapisan na papiriću je bio samo s cimetom, dodala sam jabuke, mrkvu (volim tu kombinaciju), dodala zobene pahuljice, ne previše ovaj put, ali drugi put dodajme više (volim i zobene pahuljice u kolačima), zamijenila dio brašna integralnim, dodala i limunovog soka, dodala vanile… Sad kad razmislim, od starog recepta nije puno ostalo :-)  Rezultat je više nego zadovoljavajući, okus odličan, kolač divno sočan, baš kako ga volim, miris cimeta i jabuke oduševljava, mrkva optički stupa na scenu, ma i M. je odmah dva komada pojeo, uz komentar da ovaj kolač slobodno mogu napraviti češće. S obzirom da su me na  Facebook stranici nakon postanja slike kolača pitali za recept, evo ga skuckanog na brzinu:

Sočni kolač s jabukama, mrkvom i cimetom, bez jaja, za koji ne trebate vagu. Mjera u šoljama (250ml). Za okrugli pleh (dimenzije 26cm).

Ingredients
  1. Mjera: 1 šolja (250ml)
  2. 1 šolja smeđeg šećera
  3. 1 žličica vanila esencije (opcionalno, ja koristim domaće)
  4. 1 šolja bijelog brašna
  5. 1 šolja integralnog pšeničnog brašna
  6. 1/2 šolja zobenih pahuljica
  7. 1 mrkva, rendana
  8. 2 jabuke, srednje veličine, oguljene i rendane
  9. 1 paketić praška za pecivo
  10. 1-2 žličice cimeta (po ukusu)
  11. 1 šolja mlijeka
  12. 1/ šolje ulja
Instructions
  1. Zagrijati pećnicu na 180°c.
  2. Prvo promiješati suhe sastojke varjačom (ne treba mikser). Polako dodavati ostale sastojke (jabuke,mrkvu, limunov sok, ulje, vanilu), dobro promiješati dok ne dobijete homogenu smjesu.
  3. Okrugli pleh premazati uljem i pobrašnjaviti (ili obložiti papirom za pečenje), izliti tijesto, poravnati.
  4. Peći 20-25 minuta na 180°C. Test čačkalicom.
Notes
  1. Prije serviranja posuti šećerom u prahu ili mješavinom cimeta i šećera. Uživati!
