Sweet Coconut Pineapple Polenta/ Slatka palenta s ananasom u kokosovom mlijeku
I really love the diversity of polenta, as a side dish, in bread, but also in desserts. Polenta is the Italian name for cornmeal. It can be coarse, medium ground or finely ground, yellow or white. For the recipe I am sharing today, I have used finely ground instant polenta, but you can also use medium ground or coarse polenta, up to your taste. Polenta takes a long time to cook, typically simmering in four to five times its volume of watery liquid for about 45 minutes with almost constant stirring. As I am not into stirring for such a long time (call me lazy :)), I prefer instant polenta , especially when I am in lack of time or when I am preparing it for breakfast.
Usually I am having all kinds of oatmeal variations for breakfast but sometimes I like to make breakfast yogurt (with nuts, honey and fruit) or polenta. I have discovered the tasty varieties of sweet and savory polenta, and my husband also likes it a lot, so I am experimenting with different flavours and combinations. On Sunday I have cooked polenta with coconut milk instead of milk, added grated coconut, pineapple purée, roasted almonds and sprinkled my creamy polenta with black sesame, almonds and coconut chips. A really, really good way to start the day!:)

- 200 ml coconut milk
- 120-140 ml water
- 70 g polenta (I used instant polenta)
- 3 teaspoons sugar (or other sweetener)
- 3 tablespoons grated coconut
- 1 teaspoon vanilla extract (optional)
- pineapple puree
- roasted almonds (puree canned or fresh pineapple in a food processor)
- black sesame
- In a medium saucepan add polenta with coconut milk and water, bring to a low boil. Stir using a whisk to stir out any possible lumps. Add sugar or other sweetener, vanilla essence and grated coconut, stirring frequently until the polenta has thickened. Add water if necessary. If you use instant polenta, it should take 3-5 minutes to cook, if you use normal polenta, it may take up to 40 minutes. Prepare the pineapple puree by mashing canned or fresh pineapple in a food processor. Place polenta into breakfast bowls, pour some pineapple puree over it, sprinkle it with roasted almonds and /or black sesame.
- This polenta is not overly sweet, if you like it sweeter, please add more sugar or other sweetener.
Palentu sam do prije nekoliko mjeseci poznavala samo u slanom izdanju, kao prilog, onako kasično uz mlijeko ili kiselo mlijeko, u kolačima i kruhu, ali ju nisam nikad probala kao dessert ili snack, u slatkom izdanju. Onda sam isprobala prvu varijantu s voćem i lješnjacima, i jako mi se dopalo, i otada sam isprobala nekoliko varijanti, od kojih mi je ovaj recept, koji danas želim podijeliti s vama, s kokosovim mlijekom, musom od ananasa, kokosom i prženim bademima. Palenta se obično kuha i do 40 minuta, na laganoj vatri, pa u nedostatku vremena, a i pomalo zbog lijenosti često koristim instant palentu, koja je skuhana za nekih 5 minuta. I ja i M. volimo pojesti ovu kremastu palentu, dok je još topla, kad nam dosade ovsene pahuljice s voćem, medom i orasima ili lješnjacima… Kad pomislim da do prošle godine gotovo nikad nisam doručkovala, a sad je već postao nezizostavan obrok za mene, ne mogu sebi da se načudim! Puno više energije imam, ne prejedam se više za ručak (jer sam prije naravno pregladnila, kafa za doručak naravno nije bila dovoljna da s energijom započnem dan).
Da li vi doručkujete, i šta najviše volite doručkovati?
- 200 ml kokosovog mlijeka
- 120-140 ml vode (u zavisnosti koliko gustu palentu volite)
- 70 g palente (instant)
- 3 žličice šećera ili neko drugo sladilo
- 3 žlice kokosa
- 1 žličica ekstrakta vanilije
- mus od ananasa (u blenderu sameljite nekoliko kocki svježeg ili konzerviranog ananasa)
- blanširani bademi
- crni sezam
- čips od kokosa
- U srednjem loncu staviti vodu i kokosovo mlijeko, umiješati palentu i na laganoj vatri miješati, pazeći da ne ostanu grudvice. Dodati kokos, šećer (ili sladilo po izboru), uz stalno miješanje. Dodati esenciju vanilije, promiješati. Vrijeme kuhanja instant palente je otprilike 3-5 minuta. Gotovu palentu rasporediti u zdjelice, preliti musom od ananasa i posuti bademima, crnim sezamom i čipsom od kokosa. Uživati :)
- Napomena: ova palenta nije puno slatka, ako volit više slatko, dodajte više šećera ili drugog sladila.
- Servirati najbolje toplu, za doručak ili kao međuobrok, ali i hladna će odlično poslužiti kao snack!
