Garlic Chickpea Muffins with Cheese | Muffini sa slanutkom, češnjakom i sirom

Muffins are my favourite treats for picnic, snack or packed lunch, and I have tried the most unusual combination of flavours. This time I have combined chickpeas, kidney beans, cheese, used chickpea flour, and spiced it with chilli and garlic- a winning combination!

Ingredients
  1. 3 eggs
  2. 85 g all-purpose flour
  3. 85 g chickpea flour
  4. 120 ml olive oil
  5. 100 ml buttermilk
  6. 1,5 teaspoons baking powder
  7. 2 teaspoons parmesan cheese, grated
  8. salt, pepper
  9. 0,5 teaspoons chilli flakes
  10. 50 g Feta cheese, crumbled
  11. 100 g chickpeas (cooked or canned)
  12. 1 clove of garlic, minced
  13. 2 teaspoons of parsley (fresh), chopped
  14. 50 g kidney beans (cooked or canned)
Instructions
  1. Preheat oven to 180°C/375 F.
  2. Lightly coat the muffin tin with olive oil or use sillicone molds.
  3. Whisk all ingredients except Feta cheese, stir gently with a spatula. .
  4. Add about 50 g chickpeas (the rest sprinkle on top of muffin) and parsely, stir gently with a spatula.
  5. Add 1 spoon of the batter, then sprinkle with some feta cheese, and coat with 1 spoon of batter.
  6. Decorate muffins with chickpeas and kidney beans on top.
  7. Bake for 18-20 minutes until golden brown.
  8. Serve warm or cold.

U posljednje vrijeme nisam stigla učestvovati u igrici „Ajme, koliko nas je!”, i ovaj mjesec nisam bila sigurna hoću li stići, ali ovomjesečnoj temi slanutak/ leblebije  koju nam je zadala Tanja s bloga Kuhinja zaposlene žene nisam mogla odoljeti. Slanutak često pravim, najčešće u varivima, curry varijantama i salati, i već odavno sam imala ideju da ih isprobam i u tijestu, prvo u muffin formi, a kasnije u kruhu. S muffinima volim eksperimentirati, volim neobične kombinacije sastojaka, nekad dobijem nešto fenomenalno, nekad se doduše i zeznem, no ova varijanta nas je oduševila. Spoj češnjaka, slanutka, čilija, dvije vrste sireva i crveni grah je bio pun pogodak. Ovi muffini su idealni za piknik, buffet, i kao međuobrok na poslu.

Brzo, jednostavno, divnog okusa!

Ingredients
  1. 3 jaja
  2. 85 g brašna (glatkog)
  3. 85 g slanutkovog brašna
  4. 1,5 žličica praška za pecivo
  5. 120 ml maslinovog ulja
  6. 100 ml mlaćenice (buttermilk)
  7. 1 češanj češnjaka
  8. 2 žlice naribanog parmezana
  9. 50 g izmrvljenog Feta sira (ili neki dr. po želji)
  10. sol, papar
  11. 0,5 žličice čili pahuljica
  12. 100 g skuhanog slanutka ili slanutak iz konzerve (dobro ispranog i ocijeđenog)
  13. 50 g crvenog graha, skuhanog ili iz konzerve
Instructions
  1. Zagrijati peć na 180° C.
  2. Pripremiti pleh za muffine. Nauljiti pleh ili koristite silikonske kalupiće.
  3. U posudi izmiješati sve sastojke (i 50 g slanutka) i lagano spatulom promiješati, sve osim feta sira.
  4. U kalupiće sipati 1 žlicu tijesta, onda malo izmrvljenog Feta sira, pa opet 1 žlicu tijesta.
  5. Dekorirati muffine slanutkom i crvenim grahom.
  6. Peći 18-20 minuta dok ne dobiju zlatnožutu bolju.
  7. Servirati toplo ili hladno, uz jogurt ili mlijeko.
Notes
  1. Savršeni slani muffini za piknik, buffet, i kao međuobrok na poslu. Brzo, jednostavno, divnog okusa!
