Broccoli-Cheese Muffins/ Muffini s brokolijem i sirom
I love broccoli. I mean, I really LOVE broccoli. It is one of my favorite vegetables. I like it boiled, steamed, stir-fried, even raw. I am always trying new ways to make broccoli, the Broccoli Cream Soup is one of my all time favorites, but I also love the broccoli cheese combination, so today I am posting a recipe for savory broccoli cheese muffins that we love to eat with a garlic herb dip. A perfect party appetizer, or snack, with or without a dip!
Ingredients (for 12 muffins):
600 g broccoli
150 g all-purpose flour
50 g of corn flour
1 egg
125 g sour cream
50 g of natural yoghurt (3.5%)
6-8 tablespoons milk
1 tsp baking powder
½ tsp bicarbonate of soda
40 ml olive oil
100 g of Gouda cheese, grated
salt
pepper
nutmeg
Method:
Preheat oven to180 °C.
Put broccoli florets into boiling water, and blanch for 2 minutes. Then test it by pricking a knife in the stalk of the floret. Remove and place it in the iced water for 30 seconds or more, until cold. Remove and place on the tray lined with paper towel. In a bowl whisk sour cream, egg, yogurt and olive oil.
In another bowl combine flour, baking powder, baking soda, then sieve flour-baking powder mixture into the sour cream–mixture. Add about 50 gGouda cheese, milk and stir. Add salt and pepper, and nutmeg to taste.
Bake at 180 ° C for 20-25 minutes until golden brown.
Garlic and Herb Creme Fraiche Dip
Ingredients:
1 onion, small, chopped
2 garlic cloves, chopped
½ bunch parsley (30 grams)
½ bunch of chives
200 g creme fraiche
Salt and pepper
2 tablespoons plain yogurt
Method:
Onion, chop the parsley, chives, garlic press and mix withremaining ingredients. Season withsalt and pepper.

Priprema:
Zagrijte pećnicu na 180 ° C.
Očistiti brokulu i blanširati u kipućoj vodi oko dvije minute, onda ohladiti hladnom vodom.
Izmiješati u zdjelu kiselo vrhnje, jaja, jogurt i maslinovo ulje , umutiti mutilicom za snijeg (mikser nije potreban).
U dugoj zdjeli promiješati brašno, prašak za pecivo, sodu bikarbonu, zatim sve prosijati u smjesu od jaja i kiselog vrhnja. Dodati na kraju oko 50 g Gouda sira, i mlijeko. Promiješati. Dodati sol i papar, dodajte muškatnog oraščića po želji. U plehu za muffine (ja sam koristila sam silikonske kalupe) pripremiti papirne košarice, te ih napunite 2/3, prvo stavite red tijesta (1 žličicu), onda jednu brokoli ružicu, te opet red tijesta. Na kraju posuti muffine preostalim sirom. Peći na 180 ° C oko 20-25 minuta dok muffini ne dobiju zlatno smeđu boju.
Dip s češnjakom i začinskim biljem
Sastojci:
1 manja glavica luka,
2 češnja češnjaka
½ vezica peršuna
½ vezice vlasca
Creme fraiche 200 g
Sol i papar
2 žlice običnog jogurta (3,5 %)
Priprema:
Nasjeckati nasitno luk, peršin, vlasac, češnjak i pomiješajte s preostalim sastojcima.
Posoliti i poberiti po želji.
